  1. Preheat a Panini grill.
  2. Trim the top and bottom off the ciabatta rolls so that they are about 1 inch thick.
  3. Slice open lengthwise.
  4. In a skillet, sauté the bacon until crisp.
  5. Remove the bacon from the skillet and discard most of the oil.
  6. Pour in the beaten egg, season well with salt and pepper, and let the eggs set like an omelet.
  7. Divide the spinach between the two roll bottoms.
  8. Top with the crispy bacon, then half of the omelet, and finish with the cheese; cover with roll top.
  9. Brush both sides of the Panini with a little oil and grill in the preheated Panini grill for 2-3 minutes, or according to the manufacturer’s instructions.
  10. The bread should be golden brown and the filling warmed through.
