Egg and Vegetable Pie

This is a really yummy, quick and healthy dinner. It's especially good for cleaning out the fridge at the end of the week. My flatmate used to make it all of the time, his signature dish. I always double the ingredients because everyone goes back for seconds!!

Delightful Pie. Found it quick and simple to make. Made it the other night and everyone loved it. I doubled the ingredients to use member Chef #387942 idea of making up in muffin pans to freeze for lunches. I adapted the recipe to also added 1/4 cup parmesan cheese and fresh mushrooms. Thanks KatieStew, this recipe will be requested over and over again by the family.

  1. Whisk eggs together.
  2. Add flour and oil gradually and beat until smooth.
  3. Add all other ingredients.
  4. Place in a greased pie dish.
  5. Bake at 200 celcius for 30 minutes
  6. Serve hot with tomato sauce (ketchup).
