This is a really yummy, quick and healthy dinner. It's especially good for cleaning out the fridge at the end of the week. My flatmate used to make it all of the time, his signature dish. I always double the ingredients because everyone goes back for seconds!!

Delightful Pie. Found it quick and simple to make. Made it the other night and everyone loved it. I doubled the ingredients to use member Chef #387942 idea of making up in muffin pans to freeze for lunches. I adapted the recipe to also added 1/4 cup parmesan cheese and fresh mushrooms. Thanks KatieStew, this recipe will be requested over and over again by the family.

I have to rate this recipe 5 stars becauce my 2 year old and my husband both loved it. Neither of them are big veggie fans so I'm happy to find something they will eat. Very suprised that Miss two cleaned her plate. My husband said it wasn't like eatind veggies at all. I think I will even make this up in a muffin pan so that I can freeze it and re-heat easely after a busy day. I will even pack this in my daughters day-care lunch box.
