- Deseed and dice the pepper, drain and rinse the beans. In a bowl, mix them with the sweetcorn and salsa.
- Arrange some of the lettuce over the base of a tortilla. Spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of Edam. Spoon 1 tbsp yoghurt on top.
- Carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal. Repeat with the remaining tortillas and filling.
