i made this with eggplant instead of zucchini: Delicious. I used low fat cheese and minimal amounts of oil. I think I managed to get it down to a 6 point weight watchers meal from 11 points! I will make this again.
This is time consuming to make. It was ok but I think it was my fault. I used sausage and cooked it with garlic gloves, green pepper, and onion. Used a sausage flavored spagehtti sauce. I drained everything really good and halfed the cheese but still came out greasey. I will try again with ground beef next time. I also thought the zuchinni was gonna turn into a crust but it didn't.
Here is the dinner conversation: Husband, "This casserole is really good, don't you agree?"; Fussy 9 year old son: "Oh man, you don't know the half of it" during his second helping. I couldn't ask for a better response.
Whole family loved it! Used McCormick Thick & Zesty for the Tomato Sauce and it added a ton of flavor. I also decreased the Mozzarella & Cheddar by 1/2.
Delicious dish! Followed the recipe to a 'T" and it turned out great. I used ground turkey this time, but next time I think I'll try pepperoni. Another good one, Kittencal!
I liked this, will probably make it again with some twists. I'd like some mushrooms and peppers, maybe go 50/50 hamburger and sausage to give it more flavor.
Ultimately I wasn't crazy about the dish, but that zuchini crust is awesome! I will probably use it for other casseroles. Thanks for sharing.
I gave it 4 out of 5 stars because 4 out of 5 kids liked it! My 5 year old had 2 helpings. She never realized it had zucchini in it. She loved how cheesy it was. Topped it with crushed taco Doritos.
Everyone enjoyed this....very good didn't miss the carbs at all...one of my favorite chefs!
