    This one grabbed me for seconds at a potluck recently, so I just had to snag the recipe from the chef. I was amazed at how easy it was, and if you've never liked black bean salad...well, just try this one! Update Jan 8, '08: I just realized that I should warn those who love things hot & spicy that this is NOT! It is what I would consider tex-mex for those who don't like things hot. Hey, man, what can I say, I live in Canada!

    • 3 (15 ounce) cans black beans (or experiment with different beans)
    • 1 (15 ounce) can whole kernel corn
    • 1 cup mayonnaise
    • 1 (10 ounce) bag chili-n-cheese Fritos corn chips (since these are hard to get in Canada, any corn chips will do, preferably BBQ or Chili flavored)

      Sorry, but this was so bland I added drained green chilies, green topped onions, pimentos, sour cream,and more corn.It then was alot like a dip I make called cowboy caviar. Dula

      Thanks for sharing this - reduced the ingredients by 1/3, quickly mixed them together for a late supper, served with fresh tomatoes, it was so very good.
