Let me tell you this kicks butt!!! My girlfriend's momma makes this and it is to die for!!!

- 2 lbs potatoes
- 2 teaspoons garlic powder
- 1⁄2 teaspoon salt
- 1 tablespoon pepper
- 3⁄4 cup cider vinegar
- 1⁄2 cup red onion
- 1⁄2 cup olive oil
- 3 tablespoons dill weed
- Boil your potatoes about 40 min until done., drain. Peel the skins off and slice or chop the potatoes up (preferred method still while the potatoes are warm)and place in a large mixing bowl. Pour the cider vinegar over the potatoes and stir once- Let them sit for 1 hour to soak up good.
- Slice up red onion and add them to potatoes as well as the olive oil. Add Dill and pepper and salt and garlic powder. Mix well and serve.
- Serve room temperature.
Very good: next time I'll reduce the cider vinegar a bit and add some cooked crumbled bacon. Made for PAC Spring 08.
I really liked this, but I love vinegar. Thought I could stay away from it, but it kept calling my name! I prefer potato salad without eggs & mayo. Thanks for the recipe!
