Easy Veggie and Ham Supper

  • In a large non-stick skillet, melt butter over medium heat.
  • Add veggies, ham, pasta, garlic and oregano.
  • Cook, stirring occasionally, for 3 minutes.
  • In a bowl whisk eggs and mustard until blended; stir in 3/4 cup of the cheese.
  • Pour egg mixture into skillet and stir gently until eggs start to thicken; smooth the top surface with a spatula.
  • As the egg mixture continues to cook, lift the edges to let the uncooked portion run underneath.
  • When no visible liquid remains, about 2 minutes, arrange tomatoes cut side up and sprinkle with remaining cheese.
  • Cover with a lid or foil and cook 2 minutes or until cheese is melted and bottom is lightly browned.
  • Remove from heat; let stand for 1 minute before cutting into wedges.

  1. Another keeper! So easy to make and really delicious. Directions are very well written. I used leftover cooked ham, carrots, broccoli and cauliflower for the veggies, and Italian seasoning because I was out of oregano. I think this recipe would be good with crispy bacon instead of the ham and potatoes instead of the pasta too. Served it with the last of our garden tomatoes sliced and thick slices of bread toasted and buttered. Yum.
     
  2. This was very easy to make. I used some leftover ham from this weekend. I wasn't really crazy about the noodles, but it was still good. I would make it again, but I think I would use potatoes instead. Made and reviewed for Please Review My Recipe Tag Game - Thanks :)
