Easy Vegetable Soup

"I used all my favorite veggies in this soup. If you want to omit one, just make sure you have a total of 6 cups of other veggies. Very filling, low-calorie meal!"

  • Put water in a large pot, add boullion cubes, onion and potato, cover and simmer for 15 minutes, until potatoes are soft.
  • Add all the vegetables, salt, pepper and cumin, cover and simmer for at least 1 hour.
  • If you want a thicker soup, add the oatmeal.
  • Enjoy.

  1. I LOVE a good veggie soup....the only thing I did different was add about 1/2lb of ground turkey...(lower fat than beef) it was just enough to add a WONDERFUL flavor...and the whole family was happy!!
     
  2. This was very easy to make. I used all the veggies as listed except fresh green beans for the frozen ones. The one change I would make next time is to eliminate the cumin. It was too spicy for my taste.

Hi .. The pic is of my beautiful son, born on 2/5/2005. His name is Tariq, meaning Bright Star. As I type this, he is blowing bubbles in his water cup and watching cartoons. He whined to get this water for 15 mins and now he won't drink it, he will only play with it. Sigh.. A few days ago he came up with this song, so sing along to the tune of "Old McDonald" : Old McTariq Laq Laq Laq E I E I OOOOOO LOL I thought it was the cutest thing :-) When I'm not running around after my son, or cleaning up the mess he makes wherever he goes, I cook and bake (my husband loves the blueberry muffins I make) and I love trying new recipes .. I also love to read, and collect sci-fi/fantasy novels .. I have over 500 books and still counting ..
