Several fruits combined in a wonderfully moist cake that needs no frosting.
- 1 large orange
- 1 medium banana
- 1 cup raisins
- 1 3⁄4 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1⁄2 cup margarine
- 1 cup granulated sugar
- 2 eggs
- 1⁄2 cup buttermilk
- 1 teaspoon vanilla
- Preheat oven to 350°F Grease a 9 inch square cake pan.
- Peel and cut orange into pieces; remove seeds. Combine orange, banana and raisins in food processor and chop coarsely. Combine flour, baking soda, cinnamon and salt.
- Cream together margarine, sugar and eggs in large bowl on high speed of electric mixer until light and creamy. Add fruit mixture. Add dry ingredients alternately with buttermilk and vanilla, mixing lightly after each addition. Spread batter evenly in prepared pan.
- Bake for 50 to 55 minutes or until toothpick inserted in center comes out clean.
This is a really yummy cake, it reminds me a lot of a carrot cake or a zucchini bread in flavor/texture, but obviously without the veggies! I loved the bright orange flavor, so I added the zest of my orange too. You are right that it doesn't need frosting. However, if one were to be in a decadent mood, I could easily see this being made as a layer cake with cream cheese frosting. Made for Photo Swap, Yea Team 2! Thanks, Redsie!
Awesome! I even cut down the sugar, and everyone loved it. All the kids ate it up. I used nearly a cup of whole wheat flour and 1 cup of white flour, and it still turned out great. Even my 3 year old said "I LOVE this cake!" It's nice to know they're eating healthy and enjoying it!
