Easy to Slice Meatloaf

ingredients
- 2⁄3 cup evaporated milk, undiluted (Pet brand preferred)
- 1 egg
- 1 cup cracker crumb
- 1 1⁄2 lbs ground beef
- 1⁄2 cup chopped onion
- 1 1⁄2 teaspoons salt
- 1 teaspoon dry mustard
directions
- Mix well in order given.
- Press into a greased 8X5X3" loaf pan.
- Bake in oven at 350F for 50-60 minutes.
- Allow meat loaf to stand for 5-10 minutes before slicing.

I am not really a meatloaf person, or an onion person, and I have never seen evaporated milk in meatloaf, but this was pretty good. I didn't have crackers, so I used Panko breadcrumbs, but other than that, I followed the recipe ingredients exactly. I was making oven-baked baby potatoes at the same time, so I kind of divided my baking sheet with tin foil, and just shaped it into a loaf on a baking pan (made for easier clean-up too!). I didn't even put any ketchup on it (which is what I usually do with meatloaf). I would probably cut the salt down to 1 tsp. or maybe even less if I made it again, as a personal preference. Made for Fall PAC 2012.

LOVE THIS RECIPE! This makes great sandwiches, or can be used as a meat main dish. What I really like is the versatility! You can use the condiment(s) you like to accompany the sides you are serving, i.e, soy for Asian(or Hoisin, Chinese Mustard, etc.). If you want it American, serve with ketchup, BBQ sauce, or gravy. For Mex, top it with salsa and sour cream(cheese, jalapenos, etc.) I think there will be some sliced "some of this" in my freezer forever. Thanks for a ground beef recipe that will allow me to placate my palate daily with whatever I might be in the mood for. It is plain. It is simple. But, you can do whatever you want with it depending on your dining whim!

THIS WAS EXCELLENT!!!! I have tried many meatloaf recipes only to be disappointed or not fully satisfied. My family really enjoyed the flavor of this and it was so simple to make. The only change I made was to use whole wheat bread crumbs instead of cracker crumbs. Thanks for posting this. It is now my go-to recipe for meatloaf.

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member. It's just a tad boring now and just another recipe site like all the rest. Sad.
