I've been cooking this for years! I could never decide which I liked better - the chicken or the beef!!

  1. Add all ingredients in an ovenproof container, cover and cook at 350 for up to 2 hrs- until water is all absorbed.
  2. Suprisingly good!
  3. Update 4/9/11~~~I have found that I like my barley a lot better when it is more 'al dente', so I now use 1 cup barley and 2 cups water and cook for about an hour~~~Much better~~~;~)).

We loved this casserole! I used half beef and half chicken broth. I have done this with rice before, so knew we would like them mixed.
