  1. In a baking dish arrange chicken pieces.
  2. sprinkle both sides of chicken with seasonings.
  3. top with peppers and onion
  4. drizzle with oil.
  5. bake uncovered for one hour at 325 degrees after one hour turn temperature to 400 and bake 15-30 minutes longer.

What a quick and easy meal to prepare when you are short on time. Heck, even if you have plenty of time, this delicious dish is one that won't disappoint. I particularly like the fact that it calls for ingrdients that I always have on hand so whenever I want a quick meal, I'm ready to go. I made this again, and just have to say how great it is! good! And, yes.....VERY EASY!!! I am loving the taste of this chicken. I will be using this recipe quite often. I used boneless, skinless chicken breasts for the chicken pieces. I had only some really, *really* small green bell peppers because of the cold weather now that had to be picked. I used 3 of them because of how small they were, and then I used 1/4 of a large onion. I then used about 1 tbsp of season salt (yes we like our salt), and about 1 tsp pepper. I will be making this again! Thanks so much for the great recipe!
