This is a simple but good soup. With a few changes it was very good. I followed the recipe as written other then I only used 6 cups of water. I thought it was a bit bland so added a total of 8 beef boullion cubes. I used a 16 ounce bag of coleslaw mix and didn't add the zucchini as I didn't have any. I also added a good bit of pepper. The longer this sits, the better it is. We really enjoyed this with the changes made.

We really enjoyed this soup, I used the hand blender to puree it for the kids as they are funny about veggies but they both ate it all!!! It was a nice tasting easy to make soup, I used real onion instead of the dried flakes. Thanks for a yummy soup recipe.
wow this is a really thick soup, just the way we like soup! very nice combination of flavours. Had to made a couple of changes, had no dried onion flakes, subed with a very large leek, chopped and I used canned beef broth and added a little dried garlic chips. Came out very tasty and we will be making it again. I love having good soup in the freezer for lunch and this one fit the bill, delicious for supper tonight and the rest went in the freezer. Soup often makes for a simple lunch or a light evening meal at our house. This super easy to make soup was absolutely delicious, light yet filling. I made as posted but did use homemade beef broth. This is an excellent combination for a very tasty soup. Will definitely be making this one again ... and again! Thank you for sharing.
