I don't know what else to call these, Super easy, super tasty, my daughter requests these every week. They can be mashed with a big dollop of sour cream added in, for a great mashed potatoe. Also great as leftover homefries for breakfast. This is a double duty recipe.
- 2 lbs potatoes, peeled cut, diced into 1 inch cubes
- 2 quarts water
- 1⁄4 cup chopped sweet onion
- 1 garlic clove, minced
- 1⁄4 cup butter
- 1⁄2 tablespoon dill weed
- Boil potatoes, onions and garlic, dash of salt, till potatoes are soft.
- Add butter and dill. Salt and pepper to taste. Stir.
These potatoes were so quick and easy to make! I added a little extra butter and salt but otherwise followed the recipe. Made and reviewed for 2012 Spring PAC.
