ingredients
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon extra virgin olive oil
- 1⁄2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1⁄2 teaspoon ground black pepper
- 2 large carrots, diced
- 2 medium red potatoes, unpeeled, diced
- 1⁄2 lb dried split green peas
directions
- Place all ingredients in crockpot and cook on High for 5hrs. That's it!
- *I stirred occasionally but I don't imagine this is necessary.

First of all, be careful about your crock pot - "high" is not the same on all of them. I got a bunch of burned peas because I set the pot on High. Secondly, I'm sure that some liquid is missing. I added a tablespoon of water, just in case, and that was another reason I got burned peas and other vegetables. I recommend adding at least a cup of chicken broth or even just water. Otherwise, I don't think you'll get soup, just mushy vegetables. I also substituted a stalk of celery for one of the potatoes. Penny
