Easy Sesame Cashew Noodles

"You might want to double up on the sauce ingredients and increase the pasta amount slightly. This sauce is better if prepared a day or even two days in advance and refrigerated, to allow the flavors to blend, but allow to sit until room temperature before using. This makes a great side dish!"

  • In a blender, blend the sauce ingredients until smooth.
  • Season with salt and pepper to taste.
  • Just before mixing with the sauce and serving, cook the pasta in a large pot of boiling salted water until JUST firm-tender (do not overcook the pasta) drain and rinse well under cold water; drain well again.
  • Toss the cooked pasta with the prepared sauce (if the sauce was chilled then warm before mixing with the pasta).
  • Sprinkle with chopped cashews and serve.

  1. These rock. I am a fatty sauce fiend, so I used one 16 ounce box of noodles and doubled up on the sauce! I also did not let the sauce sit before tossing with the noodles due to time constraints, and it was still completely awesome, but next time I will definitely do it the way the recipe says. Thanks Kittencal, I will be making these again and again!
     
  2. What a nice and spicy dish. Followed the recipe exactly using 1 tsp. red pepper. Cooked up 1/2# angel hair pasta. Garnished with green onion. Served with Kitten's Asian Hoisen Pork Ribs (made with chicken) #151871. Delicious.
     
  3. My husband and I loved this dish! I must say, I only used 1/4 tsp. of the red pepper flakes and only 1 tbls. of the sesame oil. I made half the noodles and used all the sauce. Thank you for a yummy dish!
