Delicious way to eat butternut squash. The only problem I had was that cutting the rind off of the squash was a struggle {and took me about 15 minutes to cut up}. Maybe next time I'll buy the squash already cut up. You don't really taste the maple flavoring and it isn't too sweet. This is a good autumn side dish. Reminds me of sweet potatoes or pumpkins.

We really enjoyed this tasty dish Saralaya. Roasting the squash brought out its natural sweet flavor. The squash was tender and very flavorful. Perfectly cooked and delicious to eat. We really enjoyed the addition of the maple syrup. Thank ;you for sharing a recipe that I| will make again and again. Made for Spring Pac/2012

It was very good and I didn't even use real maple syrup. Next time I will use the real maple syrup ande I bet it will be awesome! I also used olive oil instead of vegetable oil. Yummy!

Saralaya, this is a terrific dish. I've had roasted butternut many times before, but the maple syrup and cinnamon really sets this version miles above the rest. Even Billy gave it 4*, and he's not a veggie lover. That in itself speaks volumes. This was very quick to put together, and only took 25 minutes in the toaster oven. Other than putting chopped chives (right out of the garden) on top for colour, I followed your recipe exactly. You can bet we'll be making this one again. This was served with Great Expectations Roast Chicken and Garlic Mashed Potatoes. Honoured to make this as a "Thank You" for voting for Lawrencetown, Nova Scotia in the 2010 Kraft Hockeyville Competition.

We really enjoyed this. It was a lot like sweet potatoes, but my daughters liked it better. I made it the night before I served it & warmed it in the oven with some butter on top. Yum!
