I love this! I made it one night when my boyfriend wasn't happy with the rice (too bland) so I dumped some corn in and he loved it and so did everyone else!
- Make rice so that you have 2 cups cooked rice.
- Heat up corn, drain off the water, add the butter and the season salt to the hot corn.
- Mix the corn in the rice.
I like the combination brown rice and corn but when you add cilantro to it you will taste the difference. It is a well balanced combination with lots of flavors.
I made this thinking that my Mr. Picky would enjoy it, seeing how he loves corn and he likes plain rice. He refused to try it, but the rest of us quite enjoyed it. It does look like it should be rather bland, but it isn't--give it a try!
This was good and easy to make. The recipe was a bit confusing. The ingredient list says 3 cups of rice but the directions say 2 cups. I went with the 2 cups and I thought that was perfect for the amount of corn. I also added 2 tablespoons of butter but kept the rest of the ingredients the same. My hubby isn't a fan of rice but enjoyed it made like this. We also added gravy from my dinner on top of the mixture which made it even more tasty. Thanks for a good, quick side dish.
