Tartar Sauce (Tartare Sauce has nothing to do with the product cream of tartar. Tartar sauce, or as the French refer to it, sauce tartare, consists of mayonnaise, mustard, chives, chopped gherkins, and tarragon, according to C. Owen’s “Choice Cooking,�, circa 1889. In French, it is loosely translated as ‘rough,’ as the Tartars were considered rough, violent, and savage.

I have made tartar sauce with cream of tartar for years! I found this recipe because I was looking to see if anyone else uses this ingredient. Cream of Tartar adds a tang. It is also fantastic in mashed potatoes! (not tooo much, though. Maybe 1/2 t. or less)

At what point did you decide that notwithstanding specifying the use of a shop bought imitation mayonnaise you could still use the title "Real" ?

Tartar Sauce comes from the French 'tartare'... NOT 'cream of tartar'.... so there is a reason why you wouldn't find ANY recipe that for 'tartar sauce' that contains this ingredient. Cream of tartar is a stabilizer and can used in the place of baking soda. Alton Brown has an episode where he makes fun of 'silly cooks' that put cream of tartar in tartar sauce. "Great if you want to give your guests ulcers" is what he says, but not to put on fish. In fact, cream of tartar can react with some fish and cause a horrible reaction imitating food poisoning.

Chosen for Pick a Chef, I made this to go on my veggie fillets. It was very good. I have never made tartar sauce before so I really don't have one to compare it to. I will be trying anothers recipe in the future and expect that I moght just return to this one. It was very easy!
