It's so easy to make your own salad dressings and they taste so much fresher than the bottled stuff. This recipe was recently printed in our local newspaper.
- 1⁄4 cup whole raspberries (whole, fresh, or frozen)
- 1⁄4 cup raspberry vinegar
- 1⁄4 cup honey
- 1 teaspoon fresh thyme leaves or 1⁄4 teaspoon dried thyme
- 1⁄2 cup olive oil
- Place raspberries, vinegar, honey and thyme in blender. Turn on blender and mix well. With blender running, slowly add oil. Dressing will thicken as the mixture emulsifies.
This is now our NEW Favorite! I had only Raspberry Balsamic Vinegar. (Could not find regular Rasp. Berry Vinegar)I compensated by adding a splash of red wine vinegar too.I had fresh thyme in the garden and do think it adds a lot versus dry.Awsome dressing. I served over Romain Lattuce with toasted pecans and fresh rasp. berries sprinkled in. Thanks for sharing.
