Very easy pot roast. The first time I made it I was thrilled to see my family go back for seconds.

I used a 3.5lb tip roast, substitued yellow onions cut into wedges, left out the celery. Put the potatos on the bottom, roast over the taters and onions on top. Rubbed the onion soup mix all over the roast before placing in the pot. Very good. My stepdaughter REQUESTED leftovers of this the following evening. That's a first in this house. Thanks!!
- 3 -4 lbs chuck roast
- 4 medium carrots or 1 lb baby carrots, sliced
- 4 medium potatoes, cubed
- 2 celery ribs, sliced thin (optional)
- 1 envelope dry onion soup mix
- 3 cups water (I use a little flour to make gravy thicker)
