Wonderful! I will make these again and I liked the convenience of canned peaches. I made tiny changes like a few chili flakes, sugar and water. I used whole spices as I assumed that is what the author meant. I am looking forward to trying them out in a couscous salad or a sandwich or with some chicken. There is enough syrup left over for another small jar of pickles or maybe just use it on hot cereal. I'm also keeping in mind his spectacular sounding eggplant lasagna.

  1. Boil the ingredients (exluding the peach halves) for 5 minutes.
  2. Add peaches and simmer for 5 minutes.
  3. Allow fruit to stand in the syrup until cool or overnight.
