- 1 cup self raising flour
- 1 cup sugar
- 2 eggs (in a 1 cup measure then add enough cream to fill the cup)
- 1⁄2 cup cream (or so)
- 1 teaspoon vanilla
- Mix together until just combined.
- I put mini cupcake liners in a tart tray.
- Bake for 9-10 minutes at 250°C.
Just tried these, and wanted to tell people how yummy these cupcakes are. I had no butter in the fridge and came across this recipe (luckily i had cream for some reason). They are so light and fluffy, really nice ( i made proper big cupakes - made 9). Only downside was the top had a bit of a sugary crust but that may just be because i didn't mix the flour and sugar properly first! Thanks!
