Of course when my craving for sweets hit, I'm snowed in my house and can't get to the store for any missing ingredients! (I'm out of sugar and low on butter.) I found this recipe on supercook.com based on the ingredients I do have. This saved the day and satisfied my sweet tooth! They are in the oven now and I can't wait to try them!
Pretty standard oil-based PBC recipe although its not the same kind of taste @ my usual butter-based, 1/2 br. sugar, 1/2 granulated sugar recipe...with the scoop I use it makes @ 22 cookies, I think...Thanks for sharing this recipe, its a handy one to have when those PB cravings hit & Im out of butter!
After making the decision to go homemade for Christmas gifting this past year, I spent a couple months researching recipes for cookies. I must admit at first I was drawn to this particular recipe because, obviously, it would be quick and easy. What sold me was the taste. At first it seemed too light, as I usually prefer a robust peanut taste, but then all the flavors settled in and I was hooked. Use your favorite peanut butter, some good quality vanilla and brown sugar and it'll be worth it. Everybody else loved them,too.
Easy as can be. Had mine completely mixed in 5 minutes and on the 3 pans in 8. Baked each pan for 10 minutes. Perfect 38 cookies using a small cookie scoop. Soft texture, nice PB flavor and just plain ol simple! Found your recipe through the New Kids On the Block Tag game in the Cooking Tag Games Forum.
