      Quick...EASY...good. I scratched the recommended icing as I am diabetic going instead with just a light dusting of some ginger/nutmeg/Splenda mix. Dollop of Cool whip - no one cmplained about the icing. Really cut the calories and oh - so good!

      How much of a measurement is the mashed(? or what is "ashed") peaches? 1 Cup?? I have quart jars of peaches... I'll update after I've made the cake.

      My Mam and Dad come every Sunday for a late dinner, this week I hadn't made a pudding...I searched the word easy and found this cake...I did not ice it but served it whilst still warm with custard. AMAZING!! Everybody loved it, it so moist and tastes of syrup.YUMMY SCRUMMY!!!

      If DH had his way, this cake would be rated 5 stars. My rating for the icing is a 5, but something more like a 2 for the cake. The cake has a very coarse, moist and heavy texture he loved, but I found it to be too gooey. Also,I couldn't taste the peaches, even though the ones I used were very flavorful. I can't wait to try the icing on my favorite spice cake! It's a real keeper and ridulously easy. Keep the heat low, be patient, keep stirring and it won't burn. It looks curdled and awful until it suddenly morphs into a lovely smooth paste.

      I made this cake a few nights ago for dessert. I was surprised at just how much cake it made! I got a whole lot out of it. I didn't use as much coconut as the recipe states. I also burned my icing when making it on the stove top, so I recommend you keep an eye on it. Even tho it had a bit of a burnt flavour, the cake was still very tasty! One that I'll have to try again :)

      Oh my godness!! What can I say this cake was so rich and gooey and very easy to make. I used a 16 oz. can of lightly sweetened peaches and I just used the sweetened condensed milk in the frosting. I thought this would be like a coffee cake but it this is a cake in a class by itself. I have never had a cake quite like this one. My husband wants me to make one for him to take to work. He was in sugar lovers heaven.

      I agree with Cherir. If you use the sweetened condensed milk, you do not need the brown sugar.The brown sugar is used to sweeten the evaporated milk. I used a 14 oz can of Peaches. This recipe is one I will use again. Got a lot of compliments at the pot luck.

      This cake is really sweet! I used a large can of peaches, and think maybe I should have used a "regular" sized can. I had to cook the cake for much longer than it said, so that may be why. I also used the sweetened condensed milk and oh boy is it sweet. I think next time I will use the evaporated milk. Very moist and delicious!
