A very basic quick way of preparing couscous.
- Bring orange, cinnamon and oil to the boil.
- Add the couscous and sultanas.
- Remove from the heat and leave for 3 minutes with the lid firmly on.
- Stir in the butter.
This recipe couldn't have been in the database more than five minutes when I decided I needed to make it right there and then. I've always made my couscous with chicken broth, never even thought of using orange juice and cinnamon. Let me tell you, this is outstanding. It's got a whole 'nother flavor, and I love it. It uses ingredients that I always have in the house, I always have a few bags of couscous lying around the pantry and orange juice concentrate in the freezer. I mixed up a batch of orange juice, heated it up in the microwave and within 2 minutes had everything mixed together. The only con in the whole recipe is you have too wait about 10 minutes while the couscous absorbs the liquid. I left out the sultanas because my kids refuse to eat things with "bugs" in it. I can see this as a starch alongside some Moroccan chicken, or even as the basis for a couscous dessert. Good one Missy, I can see myself making this one often!
