A quick and simple recipe from The Lighthearted Cookbook that uses the microwave to shorten prep time. I prefer the vanilla extract, but it's up to you and your tastes. :)
- 1⁄2 cup margarine
- 1⁄2 teaspoon almond extract (or vanilla extract)
- 1⁄2 cup packed brown sugar
- 2 cups rolled oats

- In an 8-inch (2 L) square glass or microwavable dish, microwave margarine at high power for 40 to 60 secnds, or until melted. Stir in extract and sugar, mix well. Stir in oats and mix well.
- In oven, bake at 350 degrees F or until bubbling and golden brown.
