  • Preheat oven to 425°F (220°C). Grease 12 muffin cups or line with paper muffin liners.
  • In a small bowl, combine milk and oats. Soak for 15 minutes.
  • In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, cinnamon, sugar, baking soda and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
  • Bake in preheated oven for 15-25 minutes or until a tooth pick inserted in center of muffin comes out clean.

  1. This is a good basic oatmeal muffin recipe. It was easy to make and aside from the sweetness, was exactly what I wanted. As-is, the recipe probably is great with some jam, unless you have trained your kids to eat with almost no sugar! However, since I needed these to be mess-free, I added a bit more sugar and they were fine.

  3. Great basic recipe! I've added a ripe banana and walnuts, chocolate chips and pecans, applesauce and extra cinnamon, finely grated carrots or zucchini, brown sugar and raisins. I'm not usually a breakfast eater but these are great with a cup of coffee.
     
  4. I loved this recipe! I added vanilla, raisins and chocolate chips. It was so easy to make and I loved it. I recommended letting the muffins cool for 10 minutes after they have been taken out of the oven, before they are moved to a rack.
     
  5. Simply delicious add 1/2 cup pumpkin pie and yummmmmy too!ThanX ENJOY

I love baking desserts and am always trying to discover new deserts to mae. I also enjoy making pastries and am especially famous for my rice pudding. When ever my mom has a party she knows who to call for the baking. I love to eat at Mandarin and other Chinese Buffets.
