Easy No Cook Buttercream Recipe

"My father, who owned a bakery, made the best buttercream from butter and fondant. When the bakery closed, I could not easily find fondant (I don't mean the kind you roll out) and figured that fondant is really just sugar and what else was like that but marshmallow creme. So, I whipped up some butter threw in some marshmallow creme and viola, made the best buttercream. It tastes great, has a smooth consistency, is great for decorating, and everyone loves it, even my father."

  • Whip butter on high with a stand mixer until fluffy (at least 5 minutes) using a flat beater.
  • Add marshmallow creme and whip again on high for at least 5 minutes until well incorporated and fluffy and then lower the speed to medium/slow until you get a smooth texture.
  • Mix in melted chocolate or concentrated coffee for different flavors.
