This is an easy vegetarian meal that I threw together for hubby and I one night. Its super easy and oh so good!
- Cook rice according to package directions.
- Saute the onion, pepper, and garlic until soft and slightly brown.
- Dump in your other canned ingredients, and seasonings. *seasonings may be adjusted to personal preference*.
- Serve. over rice.
This was so good!! We made it as directed the first night and loved it as is. The second night took the leftovers rice included, added some shredded chicken, and made some of the best nachos ever. You don't get things much better than that- simple, tasty, versatile, healthy, and easy on the budget. Thanks for sharing the dish you whipped up. = ) Lori
