I made this for the DM as a light dinner and used 2 eggs and in a 900watt microwave I cooked on high for 1 minute and then gave a stir and then cooked for 30 seconds on high and they were perfectly cooked, for dietary reasons I did omit the onion and the ham. Thank you GoIrish, made for Name that Ingredient tag game.

I used to make these sandwiches all the time back in high school. I never thought to add the melted butter first, which would have saved me lots of scrubbing when the egg mixture stuck to the bottom. I think I'll start doing this again in the morning...a great way to start your day and a very portable breakfast, too!

I use this when we are on vacation in the hotel room. Most hotels have a frig and a microwave now. I had gastric bypass so I have to have protein, and usually hotel breakfasts are just a bunch of carbs. This works really well.
