  • Saute onons and garlic in saucepan in hot oil until softened.
  • Add rice and saute 2 -3 minutes, or until it begins to turn white.
  • Add broth and salsa.
  • Bring to a full boil; cover and reduce to simmer.
  • Simmer 25 minutes & turn off heat.
  • Let rice sit for 5 minutes. Fluff with fork and serve.
  • Optional: Stir in a small can of well drained corn, mixed vegetables or sliced green onion.

I love everything about food--cooking, eating, even grocery shopping, so I guess that would qualify me as a foodie! I love to read cookbooks and watch Food TV for inspiration, but mostly I just cook without recipes. There is nothing that I like better than plying my family and friends with a home-cooked meal.
