I used sour cream and butter and garlic, salt and pepper.. pureed I'm the blender and added a bit of shredded cheddar.. Delish!!

Meh! I didn't think this was great. It was super easy to make but I didn't really care for the taste. Maybe I was expecting too much after reading all the glowing reviews. Since it's cauliflower, not potatoes, it didn't have that sticky feel to it even after I added the Parmesan cheese. It was a bit runny and I didn't think it tasted good. It wasn't terrible either but I don't think I'll make this again.
One of the best mashed cauliflower recipes I've tried. I used the food processor. Also, I used half white and half purple cauliflower to make a lavender puree, but the camera didn't pick up the color very well. Made for ZWT6.
Made for PAC 2010. I just threw everything in the food processor and Oooooo so yummy.
Made this twice now and really enjoyed it. We both love cauliflower and made this recipe as a substitute for mashed potatoes. Our personal preference was to go light on the nutmeg and to use cream instead of milk. We easily doubled this recipe in order to make a large head. We will definitely be keeping this one. I gave the cauliflower about twenty minutes, checking periodically to make sure I didn't overdue it, but wanting to get a good consistency for mashing. Then you just add everything else... ta da!!!!!!!!!!!!!!!! Talk about easy does it! I didnt add the salt and pepper, forgot, actually, and it was excellent! I've never been big on mashes, even potatoes, but this is a delicious mash, I should experiment more! DH and I were having Gordon Ramsay's Tikka Masala, and I was tempted to simply serve it over this mash, in the end I served it as a side, but it made a really nice accompaniment for a delicious meal! WOW! Do make sure to get the cauliflower really really done- overdone really- if you want a creamy consistency when finished. Mine was not so I had a texture that was still very pleasing with small pieces of cauliflower mixed in. I used all the butter- omg so good :)- 3 T skim milk 1/4 cup parm, and .25 nutmeg- didnt know if we would like it. WOW! The nutmeg gives a great flavor. I also steamed this in a little veggie broth. It needed no salt and just some fresh cracked black pepper as a finsh and it was perfection on a plate! Tasted like it could be a nightmare on your hips when it actually is pretty healthy. To be honest- I have never really cared for cauliflower but I really wanted to try it this way. I am so glad I did! Even dh who is a known veggie HATER / *Meat and Potato Freak!* that he is said this was good. That is a compliment from him! lol He even took some in his lunch! BIG compliment!
