Easy Luscious Lemon Cheesecake

ingredients

• 2 (8 ounce) packages cream cheese, softened
• 1⁄2 cup sugar
• 2 -3 tablespoons fresh lemon juice
• 1⁄2 teaspoon grated lemon, rind of
• 1⁄2 teaspoon vanilla extract
• 2 eggs
• 1 (9 inch) graham cracker crumb crust

directions

1. With an electric mixer on medium speed,mix cream cheese,sugar,juice,peel and vanilla until well blended.
2. Add eggs,beating just until blended.
3. Pour into crust.
4. Bake at 350-degrees for 40 minutes or until center is almost set.
5. Cool 1 hour.
6. Refrigerate 3 hours or overnight.
7. Enjoy!

Fast and easy to make - tasted great. Personally though, I found it the texture quite heavy. Maybe something I've done though? It's only the 2nd cheesecake I've tried to make...
