Easy Lettuce Soup

"We made this when our garden overflowed with lettuce and were suprised at how good this was. Don't laugh... I think this recipe was from Richard Simmons (though I do think he's super nice!)"

  • Cook onion in butter till soft.
  • Add lettuce, then flour, then broth.
  • Boil 1 minute, stirring.
  • Pour in blender and add milk, salt& pepper, nutmeg, and paprika.
  • Blend for a minute, then return to pot and reheat.

  1. Surprisingly good! I expected it to be a rather mild taste but it has a depth to it which reminded me of Broccoli and Stilton soup. Very quick to make, even for a soup.
     
  2. Sorry, found it lacking in flavor. I added grated carrots, scallions, chopped parsely & a garlic clove to the onion saute and sour cream as a topping, but found the taste lacking. We thought maybe adding some turkey kielbasa at the end might add some flavor. Used skim milk to cut down the fat, was that the problem??
     
  3. Great way to salvage a head of lettuce forgotten in the fridge. Easy to make and quite good. Even the fussy kids tolerated it - which is a high compliment!
     
  4. Pretty Good Soup. (Although I didn't use paprika or nutmeg which would have added more depth). A lot like Broccoli soup as the other reviewer says. Its on a par with soup you buy chilled in the supermarket. A nice crunchy texture to it. Good way of using up lots of old lettice.
     
  5. This soup just didn't do it for me. It was bland and tasted strongly of lettuce. Maybe adding herbs would have helped, but I don't think I'll be trying this one again.
