    Little Bee's Note:

    My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

    Directions:

      Heat the oil in a large pan, over medium heat.
    2. 2
      Add the sausages and cook, turning frequently.
    3. 3
      You want them browned all over and this takes about 10 minutes.
    4. 4
      Add the onions and stir up the browned bits on the bottom of the pan.

      Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.

      After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

      I'm not sure about the rest of the country, but here in NJ, once a year, various cities have what are referred to as Italian Feasts, which are nothing more than a block party during some religious festival, where food stands are set up. These sausage and pepper subs are probably the most popular food. They are also found at food stands on the boardwalks of various Jersey shore locales. This recipe is right on the money.

      I've been craving sausage and peppers, but have never really made them before. I had an idea, but needed a general guide. These were exactly what I was craving! I even "made" my 9 year old try it. He was protesting, saying that he doesn't like peppers, but I insisted. After the first bite he said he wanted a bowl of it! Thanks for posting such a simple, authentic, fantastic recipe!

      This was great!! Boyfriend liked especially. I served it w/ some pesto angel hair and buttered italian bread. Also used lean pork sausage and added a bit of chicken broth as suggested below. Will make again!
