I made these when I used to live in Georgia and was a short order cook in a restaurant.
- 1⁄2 cup cornmeal
- 1 cup flour
- 1 can corn (whole or creamy)
- 1⁄2 finely chopped onion
- 1⁄4-1⁄2 cup beer or 1⁄4-1⁄2 cup milk
- 2 cups cooking oil
- Heat oil in a medium pan.
- Mix ingredients well.
- Spoon tsp of mixture into hot oil.
- Fry until brown.
Loved these!! I used whole kernal corn, very chunky, juicy texture...even had some for breakfast the next day! My husband and kids would probably like them even more if i had used the cream corn, i'll have to try that next time. I did add a little parsley to batter and a tiny bit of fresh ground pepper. Definitely not your typical hush puppy...so much better!
These are even better than what they serve in restaurants--the creamed corn is a perfect ingredient for flavor and moistness. I added enough creamed corn to the mix in order to be able to drop it by spoonfuls into the hot oil, so I skipped adding beer or milk, no need for that. This will be the recipe I use for hush puppies from now on, easy and delicious.
These were very easy to prepare. First time I have had a hush puppy with more flour than cornmeal. They tasted pretty good and were very moist. Thanks peppermintkitty. Bullwinkle
