Holy cow, is this delicious! Going right into my best of the year cookbook. I think the green enchilada sauce with the optional chilies and the hash browns make this really special. You may have some extra beans and sauce leftover, but that's OK. We served this with corn tortillas. It was so yummy, I think I could eat it every day!
This is very similar to a dish my neighbor welcomed us to the neighborhood with! I also mashed my pintos and used red enchilada sauce. Topped with a little bacon.
i mashed pinto beans and put cheese on them in same pan i basted eggs with the green chili sauce and put some ortegas on top of eggs
finished off in microwave on top of tortillas and hash browns
I really liked this for dinner tonight. I scaled the recipe down for one, used beans I had cooked in the crockpot, made my own hashbrowns from fresh potatoes. I had some red sauce already open, so used that. I know it would be equally delicious with the green sauce. Thanks!
