A Southern dish served New Year's Day to bring good luck and prosperity for the next year.
- 1 (16 ounce) can black-eyed peas
- 2 cups prepared minute rice cooked rice
- bacon grease, for flavoring
- Prepare Minute rice to equal 2 cups when done.
- Heat black-eyed peas and add a little water if needed and about two tablespoons bacon grease.
- After rice is ready and peas cooked
- to look like soup beans mix these together and serve with ham if desired.
