  • Add the softened cream cheese to a medium bowl.
  • Chop 1 slice of a red onion into small bits. Chop the scallions into similar size and add both to the cream cheese. The red and green onion give the cheese ball not only flavor but a pleasing color.
  • Add chopped walnuts and crushed pineapple to the cheese and onions. Mix well.
  • Add more onion and walnuts to taste. The onions and walnuts give the cheese ball a nice texture.
  • Put the cheese mixture into a pretty bowl or roll into a ball.
  • Sprinkle or roll the outside with parsley and chopped walnuts.
  • Refrigerate for at least 1 hour to allow the flavors to develop.
  • Soften before serving and serve with your favorite crackers.

  1. This is delicious! However, for subtle flavor change & a bit less heat, I subbed the red onion for minced red bell pepper. Also, the red bell bleeds into a pretty light tangerine color because of the pineapple. Very pretty. Then I did a different one by substituting very well drained salsa instead of the red onion & scallion. Also added 1 teaspoon of dry taco seasoning mix from pkg. Delicious!!! Found that all of these can easily be made into balls a little smaller than a shell walnut. More time consuming to roll them, however, looks nice on platter with assorted color grapes, olives, sliced radishes, thin raw carrot coins, etc. My thanks for the kick off recipe! BTW was fantastic in itself. Even as a spread for finger sandwiches. :)
