In my case, the cornstarch just lumped together, no matter how much I mixed, so it didn't thicken. In the end, I mixed more cornstarch with a few tbsp of water in a cup and added this mixture to the pudding. It thickened well after that, but had a slightly strange texture, probably because I cooked it a few minutes after adding the eggs so that it would thicken. So next time, I'll mix the starch with a small amount of milk first; also I took LonghornMama's suggestion about adding the eggs. The taste was great and it was easy, so I'll try this again. **Update: I mixed the cornstarch with 1/2 cup of the milk and poured it in. This was MUCH better than before, and the texture was marvelous, like a pudding should be. Thanks!!!

  1. Combine milk, honey and cornstarch in a 2-quart (8-cup) dish.
  2. Cook in microwave oven at high power for 6 minutes, stirring after 3 minutes, then after each minute.
  3. Beat in eggs and cook 30 seconds more.
  4. Remove from oven and add vanilla.
  5. Pour into serving dishes or baked pie crust and refrigerate. This recipe is easily doubled.
  6. Butterscotch variation: Add 1 Tablespoon molasses to honey. Stir in 2 tablespoons butter after removing from heat. Reduce vanilla to 1 teaspoon.
  7. Coconut: Add 1/2 to 1 cup unsweetened, shredded coconut to finished pudding.
