My husband said, "Mom gets an A." I added a few pepperoni rounds that were hanging out in our meat drawer, and added minced garlic, as well.

Quick, easy and very tasty! Great on it's own. Would be fabulous with an egg on top, soft yolk, of course. The cheese is not needed. There is plenty of flavor without it and it does not really add to it.

Very good! Left our the cayenne pepper so the little ones would eat it.

My teenage daughter calls this "the best food on the planet"! The only changes I made were that I cooked up 4-6 chopped slices of bacon then cooked the potatoes, onions etc. in the bacon drippings instead of the oil and butter. Add the bacon back to the mix at the end. This is great as a breakfast with pancakes. Even better when the syrup runs into the hash...YUMM!

I added bacon to this mix and adjusted the size a bit. My husband loved it and wants me to make it again!

"Now you're talking" was my husband's reply to "Hash for dinner?" Thanks for the recipe!

Keep this in mind for your leftover Christmas ham. Simple, quick and delicious. I poached a couple of eggs on top of the ham mixture when it was almost done. Yum. Good for dinner or a hearty breakfast. Thanks for posting.
