Easy Grilled Shrimp

- 2 lbs large shrimp, peeled and deveined
- 1 (8 ounce) bottle Italian salad dressing
- 1 lime, juice of
- 1⁄2 cup salted butter, melted
directions
- Mix Italian dressing (I use Kraft Zesty Italian) and lime juice to make marinade.
- Place shrimp in resealable container.
- Pour marinade over shrimp and gently stir.
- Cover and refrigerate for 20 to 30 minutes. No longer than that or the acid in the lime will start to "cook" the shrimp.
- Thread shrimp on skewers and place on prepared grill. Be careful not to overcook.
- Dunk hot, grilled shrimp into melted butter and eat as many as you can!
- I usually serve linguini with butter and parmesan cheese with this.

I'm a late bloomer, and didn't realize how much fun cooking from scatch could be. I didn't start really cooking until my 30's. DH and I used to eat out alot. We were married 8 years before the first tax deduction arrived. We named her Victoria (Tori) for short. Four and a half years later Tori's imaginary brother James became a reality. James Taylor (not the singer) came into being when I was 41. Let me say this ladies, things do not just snap back into place when you give birth at 41. But he has been a joy and he's the funniest kid I know. Well, back to cooking.
