Easy Greek Stuffed Tomatoes

This one's fast, easy and very tasty. Serve with a salad, bread and wine for a great lunch or light supper.

  1. Preheat oven to 350 degrees.
  2. In a saucepan heat oil and saute the onion and spinach.
  3. In a medium bowl combine the sauted onion and spinach with the remaining ingredients, including the scooped out stuff.
  4. Stuff the filling back into the tomato halves.
  5. Bake for 20-25 minutes.
