Easy Granola Bars

"Leave out the preservative and give your little one something simply good for them. I like to sneak in the grated carrot just to get another vegie into the mix but it's not necessary"

  • Butter a 9" square pan.
  • In a 3 qt saucepan boil corn syrup for 1 minute only, stirring constantly.
  • Remove from heat.
  • Stir in peanut butter.
  • Stir in granola and grated carrot if using.
  • Work fast as it hardens quickly.
  • Transfer to pan.
  • Spread and pat in place with a spoon or dampened spatula.
  • Cool for an hour before cutting into bars.

  1. I have made them twice as a breakfast item. Like other reviewers, I tweaked the recipe based on what I had on hand I didn't add carrot to either batches as I didn't have any and for the granola, I mixed it up such as Special K, Cheerios, Quaker Almond Grain. I also used agave instead of corn syrup. Today I doubled the batch. Hoping I calculated correctly. For us, it is important that it maintain a firm bar shape. I also used foil for ease of cutting & cleanup

  2. Very, very peanut-buttery. Still, makes for a quick snack that's probably healthier than store bought options. I make my own granola, leave out the carrot and substitute brown rice syrup for the corn syrup (corn syrup is a dirty word these days). Biggest plus here is that these literally take 2 minutes to make. I can press it into a baking dish to cool overnight and it's ready to cut in the morning.
     
  3. These came together really quick and the kids loved them! I used Recipe #90046 for my cereal and omitted the carrot. I lined my pan with foil and then buttered that. That way, when it was time to cut them, I could just lift the foil out of the pan and cut the bars on a cutting board. Thanks for sharing!
     
  4. Excellent and wonderfully simple! I used my homemade granola along with honey instead of corn syrup (we prefer more natural). Didn't heat it, just mixed it all together, pressed it into the pan and set it in the freezer for an hour, then cut it into bars. Put it back in the freezer and later put them in a ziplock bag and stored them in the freezer. It's plenty sweet with honey so beware if you try it that way.
     
  5. Very yummy. I didn't use carrot but added handful of home roasted slivered almonds and pecan chips.

  3. Delicious! I used brown rice syrup (we have issues with cornsyrup) and replaced half the granola with chocolate chips...They melted into the mix very well. The result was a rich, gooey kind of bar cookie, so I pressed some granola (Hemp Plus--a nice light granola) into the top, sliced the bars when cooled, and pressed them bottom to bottom to make them stick together so they'd be less messy. Very good, and I sent DH with them on his long plane flight! Thanks, Tish, for something else to wake up to (or go to bed eating..)
