These cupcakes are Amazing! I didn't make them red, so we just called them velvet cupcakes, and they are like velvet! So moist & delicious. Going to make them again for the second weekend in a row.

I never log into a website to rate a recipe, but these cupcakes ROCK! I make a mean non-GF cake (Southern Living recipe), and this batter has the same consistency and very similar taste as the real thing. My husband and 7 year old LOVE them. My husband actually has to ration them out, allowing himself only two per day, or he would eat the whole batch in two days. Highly recommend!!!
These are the most delicious cupcakes I have ever had! (& I've been to all the fancy, super expensive cupcake shops). I made these for my hubby who is gluten free and he loved them! I couldn't taste a difference! I was skeptical when I saw it was the Betty crocker mix because when I used it following the instructions on the box it was not tasty at all BUT with the additions from this recipe it is to die for! Very moist! I added only one small jello instant mix box and used the chocolate Betty Crocker mix instead of vanilla. Delicious! This will be my go to recipe for now on! Thanks for posting!
I usually never take the time to sign in and review a recipe, but like the others on the review, I was so impressed by these cupcakes! Being new to gluten free, I had yet to find a tasty GF cake recipe until now... red velvet is my favorite! I ate 4 cupcakes the first night b/c they were so good. I also used a canned cream cheese frosting and they were wonderful! I plan on freezing half the batch w/o frosting wrapped in plastic wrap for when I am craving something sweet.
These are FANTASTIC! So moist and wonderful. I think they are even better than the traditional wheat based ones I had in the past. I used Silk Pure Coconut instead of milk, low-fat sour cream and whipped cream cheese frosting. I figured it out to be 168 calories per cupcake!
Was looking for a good gluten free red velvet cake recipe since my boyfriend loves red velvet cake and I am gluten free. I realized after I started making them that I didn't have any cupcake wrappers or powdered sugar. So I made it in a 9x13 greased pan and I used regular sugar for the frosting. It turned out amazing. Thank you for this recipe!
Best cup cakes ever! I only used 1 c. Powdered sugar in the frosting, and it was fabulous. If your thinking about making these, do it!
Usually wouldn't take the time to review either, but these cupcakes are incredible. Wouldn't even know that its gluten free. Delicious, moist, and hard to have just one!
I'm giving these 5 stars even though I totally screwed up on them. When step 2 said to mix all ingredients in a bowl, I did...including the cream cheese, powdered sugar, etc. Then I got to step 5 and realized that this is a recipe for red velvet cupcakes AND icing, not just the cupcakes. I know, I know...I'm an idiot and I should have read all the steps before beginning, but I'm new to baking things from scratch. Anyway, they actually turned out good despite having the frosting baked into them. Everyone liked them, including the non-Celiacs :) GREAT recipe, you just might consider dividing your ingredient list into cupcakes and icing to make it more clear for newbies like me!
