ingredients
- 1 cup rice flour
- 1 1⁄2 tablespoons sugar
- 1 3⁄4 teaspoons baking powder
- 1⁄2 teaspoon salt
- 1 egg
- 1⁄2 cup milk
- 1⁄8 cup vegetable oil
directions
- Mix the dry ingredients, (**BEAT THE EGG BEFORE YOU ADD TO DRY**).
- Add wet ingredients to dry (here is where you could add cheese, cinnamon, or other extra ingredients). Batter should be the consistency of a muffin mix.
- Grease your pan VERY LIGHTLY.
- Put in small loaf pan (double or triple recipe to make a big loaf).
- Bake 15-20 minutes at 350°F.

I love this recipe. Its easy and quick and very good. You can double it or leave it as is. I did change a couple of things. I use Bisquick Gluten Free and i don't add the sugar or salt and instead of a egg i use applesauce. I prefer Musselman's and i use 1 snack size per 1 egg. It's normally 1/4 cup applesauce per 1 egg. I also use alittle less than 1/8 cup of oil. I feel like recipes always want to much oil in them. And this recipe lets you add all kinds of things: raisins, mashed bananas, any type of fruit really. Chocolate chips, nuts, cinnamon, pumpkin. And as for the milk you can use almond milk, rice milk, coconut milk,etc. The bread doesn't brown on the top but I'm perfectly okay with that and it only takes 20 minutes. I keep in in the refrigerator in a container. Yummy! Thank you for your recipe.

I didn't really like this when it came out of the oven. I used 2 teaspoons of baking powder gave it a strong flavor. 2 egg replacer. Cinnamon and raisins. I found that it was like coffee cake so I added a sweet topping. marshmallows, butter, powdered sugar & milk all melted together and put on top. I will make this again but I will add brown sugar, cinnamon and raisins to the batter. I will also try to add pumpkin and make a pumpkin bread.
