- 8 ounces bacon
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 3 tablespoons balsamic vinegar
- 2 tablespoons sugar
- 1 teaspoon Dijon mustard

- Cook bacon over medium heat until crispy. Drain pan but leave 3 tablespoons bacon grease in pan. Reduce heat to low and add vinegar, sugar and mustard. Add potatoes. Chop bacon and add to potato mixture. Continue to cook until potatoes are hot. Serve warm.
