This uses canned tomatoes so you can enjoy the summer fresh taste any time of year.
- 3 (14 ounce) canspetite diced tomatoes
- 1 (4 ounce) canchopped green chilies
- 2 garlic cloves, minced
- 2 cups diced cucumbers, peeled and seeds removed
- 1 cup diced celery
- 1 cup diced green onion
- 1 tablespoon chili powder
- 2 tablespoons red wine vinegar
- 1⁄4 cup extra virgin olive oil
- Combine all in large bowl.
- Using immersion blender, blend to desired consistency. Or using regular blender, place half of ingredients in blender, blend and return to remaining ingredients.
