I love the garlic beets served by our local Greek restaurant. This recipe is inspired by CountryLady's Roasted Beets & Garlic and makes a nutritious side.
- 425.24 g canned beets (whole)
- 9.85 ml chopped garlic
- 4.92-9.85 ml olive oil
- 2.46-4.92 ml dried tarragon
- kosher salt
- fresh ground pepper
- Cut beets in half.
- Mix all ingredients.
Both me and my sis enjoyed this dish a lot! It has a fresh, tangy flavour and goes great with other lightly spiced dishes.
I did not find the tarragon overpowering, it went great with the earthy beet flavour and pungent garlic.

I liked this, but didn't love it. I love beets, but I found the tarragon to be a bit strong in this recipe. Otherwise, it was beautiful to look at and very enjoyable. Thanks for sharing a very innovative way to have beets!
